One of our goals is to be healthier eaters.
Besides physical health, food is also a factor in mental health.
There is also a frugal aspect to this. A box of basic white flour pancake mix is available for less than $2 at most stores. Whole wheat or whole grain mix? Easily $6 but often much more.
I have made pancakes from scratch many times. I’m not sure why I didn’t make them from scratch for camping.

I took my basic recipe and multiplied it to cover a few meals, especially with seven of us.
Mix the dry ingredients and store in an air tight container.
- 4 cups whole wheat flour
- 3 tablespoons baking powder
- A teaspoon salt
- 2 teaspoons sugar
- 4 tablespoons flax seed
I like flax seeds, ideally ground, for added omega 3 and fiber. A even requests them. Ground flax seeds also work as a binder, like eggs, to hold the batter together.
To make pancakes, I combined 1 and 1/2 cups of dry mix with 1 egg, 1 tablespoon of olive oil, and nearly 2 cups of milk. The milk depends on how thick you want your pancakes. I like the batter to be a little thinner.

The 1.5 cups of mix will yield about 12 or 13 pancakes, like the one above.

In the future, I’ll try some of our usual additions. Mixing in some steel cut or quick oats gives the pancakes a little more staying power. Great before hikes. Mixing in some cinnamon too gives the pancakes a cinnamon roll flair.
I have also made pancakes (and just cake) with applesauce. Using 1/4 cup of applesauce with replace an egg. I also think it goes well with the cinnamon and oats. I don’t like bananas but half of a banana also works as a substitute for the egg as well.
Verdict
The pancakes went over great. The kids enjoyed them. Cherokee and I were happy with ours.
I also appreciate having a healthier (and more frugal) option when camping.
